Smoked Salmon Salad with cherries
Smoked salmon is typically considered a delicacy among seafood lovers, and blending it with NW favorites, like hazelnuts, cherries and mushrooms makes it seem even more special. This salad has been a Local Ocean mainstay for many years. This version contains fresh cherries -- when not available, we swap in roasted beets.

STEPS
The smoked salmon portions need no preparation - simply open and enjoy! If you prefer, you can break up the smoked salmon with a fork and sprinkle it over the salad instead of serving the portion whole.
Mix the salad - Transfer the spinach, cherries, roasted fennel and mushrooms into a large bowl, dress with ¾ of the pomegranate vinaigrette, and toss until evenly distributed.
Plate by first dividing the salad greens evenly between portions, mounding the greens in the center of each plate. Top with red onion, hazelnuts, queso fresco, and the smoked salmon. Drizzle the remaining pomegranate vinaigrette and garnish with parsley and green onion. Enjoy!
