Honoring the Whole Catch
We don’t just serve seafood. We rethink it. At Local Ocean, every fish we buy fuels community, innovation, and zero waste.
Through our 100% Fish Program, we transform what used to be scraps into flavor, function, and a more sustainable future.

What is 100% Fish?
100% Fish is our commitment to using every part of the fish to create maximum value with minimal waste. Inspired by the Iceland Ocean Cluster’s model of transforming a small fishing economy into one of the world’s most efficient and sustainable, we’re bringing that same innovation home.
For Local Ocean, 100% Fish goes far beyond nose-to-tail butchery. It’s a systems approach: take a $12 cod and turn it into $4800 of economic value by refusing to throw anything away. By upcycling parts that were once discarded into high-quality consumer products, we’re building new opportunities on the Oregon Coast—supporting local fishing families and creating year-round jobs in a seasonal industry.

If Local Ocean upcycled every scrap of all the fish we buy every year, that would represent 0.002% of all the seafood landed in Newport. Imagine what would happen if the rest of our community followed suit. We want to make it possible for others to join in!
